Units Scale

Rub Recipe

  • 3 Tbsp Smoked Paprika
  • 1/2 cup Brown Sugar, tightly packed
  • 3 Tablespoons Salt
  • 2 Tablespoon Garlic Powder
  • 2 Tablespoon Onion Powder
  • 2 tsp Black Pepper
  • 2 Tablespoon Chili Powder
  • 1 Tablespoon Chipotle Powder
  • 1 tsp all spice

The Sauce Recipe

  • 1 3/4 cups Chicken Stock (or vegetable stock)
  • 2/3 cup Apple Cider Vinegar
  • 1/3 cup Spice Rub (from above)
  • 1/3 cup Ketchup
  • Juice from 1/2 a lemon

Easy Pork Ribs

  • 1 Rack of Pork
  • Spice Rub (recipe above)
  • Sauce (recipe above)
  • Sides of Choice

Instructions

  1. Preheat your oven 225 F.
  2. Get a rimmed cookie sheet and place a large piece of foil on it. Place your cleaned ribs (remove the film on the bottom of the ribs if needed) on the foil and pat dry.
  3. Divide your spice mixture in half. Take one half and sprinkle generously over a full rack of pork ribs, gently pressing the rub into the meat. You may not need all of it.
  4. Once coated – wrap tightly in foil and place in the oven for 3.5 hours.
  5. When the ribs have about 45-30 minutes left, start your sides (roasted veggies are great, sweet potato puree, mashed potatoes, or grits are all great!)
  6. Also combine all the ingredients for the sauce in a medium sauce pot and place on medium low heat. Stir occasionally and cook until the sauce has reduced by half.
  7. When the ribs are done, remove from the oven but keep wrapped in foil for about 20 minutes to let them rest.
  8. Unwrap the foil carefully (oil and fat will be in the bottom of the foil) you can remove the ribs using tongs and then pour this back on the ribs if desired, or discard the fat. Pour the sauce over the ribs and cut along the individual bones as desired.
  9. Serve with sides and enjoy!
